EXTRA healthy pancake recipes

For us calorie busters pancake day can be our worst nightmare. Combinations of Nutella, sugar, golden syrup can take calories numbers completely off the scale. But this Shrove Tuesday the ExtraciseLDN team have got you covered, with these EXTRA healthy recipes you truly can have your panCAKE and eat it this year:

Let's start with your base:

The crepe

Grab yourself

2 eggs

3/4 cup almond milk

1/2 cup water

1 cup white whole wheat flour

3 tablespoons applesauce.

Then combine all of the ingredients in a blender and blend for 10 seconds. Place the crepe batter in the fridge for 1 hour, or up to 48 hours.

Heat a small pan sprayed with cooking spray. Pour 1 ounce of batter into the pan and swirl to evenly spread. Cook for 30 seconds and carefully flip. Cook for another 10 seconds and remove.

Now for the toppings, why not be extra and create your own jam for your pancake:

Get 453 grams of strawberries, hulled and rinsed

1/4 cup pure maple syrup

1 tablespoon chia seeds

Then chop the strawberries into small pieces, place the strawberries in a medium-size saucepan over medium-high heat. Add the maple syrup, slowly bring to a boil and cook at a low boil for about 10 minutes.

Add the chia seeds and cook for another 5 minutes, remove from the heat and let cool. The jam will continue to thicken as it sits.

Then spread this calorie light topping on your even lighter pancake.

Bake your fruit and put it on top:

2 cups of pear slices

1 ½ cup fresh cranberries

1 cup pineapple chunks

1 tbsp lemon juice

1/3 cup coconut palm sugar

1 tbsp maple syrup

1tbsp cinnamon

¼ tsp nutmeg

½ stick melted butter

Then pre heat oven to 150C, place all the fruit in a bowl and add in lemon juice. In another glass bowl, combine your melted butter, spices, and honey or maple syrup. Add this sugar/butter mixture to your fruit and coat evenly, pour the fruit in a backing dish and pour leftover sugar/butter/oil mixture on top. Then bake for an hour.

Dark chocolate Avocado icing:

2 ripe avocados med/large, peeled and pitted, 2 ½ small avocados

1/2 cup unsweetened dark cocoa powder

1/2 cup maple syrup

2 Tbsp. coconut oil (melted coconut oil will give you a silkier texture but un-melted works okay too)

1/2 tsp. pure vanilla extract

1 tsp. ground cinnamon optional

Add avocado to a food processor and blend until smooth then add remaining ingredients and blend again until smooth.
