Avocado Pizza: a little EXTRA than the classic avocado on toast

So you need some hearty, but healthy, food to recover from your latest Chessboxing match or Yoga session. Here's a healthy pizza alternative that will satisfy your cravings but won't make you pile on the pounds!

Ingredients:

350g Wholemeal Flour

1 Sachet Yeast

200ml Water

3 tbsp Chilli Oil

2 Large Avocados

2 tbsp Coriander

1 Jalapeno

1 Red Onion

1 Pepper

2 Large Tomatoes

1 Garlic Clove

Handful of Mushrooms

Salt and Black Pepper

Dough makes two pizzas, each pizza serves 2 people.

1. Preheat the oven to 220C.

2. Mix together the water, 2 tbsp's of the chilli oil, and the sachet of yeast in a bowl - leave to rest for 10 minutes.

3. Add the flour and a pinch of salt.

4. Combine, either with a machine or your hands, into a dough.

5. Cover and put to one side to rest.

6. Chop the avocado, remove the pit, and scoop out the insides into a bowl.

7. Add salt and black pepper - mash the mixture to your desired consistency.

8. Dice a quarter of the onion into small pieces, as well as half the jalapeno and all the coriander.

9. Mix in the garlic, onion and jalapeno to the avocado mix.

10. Split the dough in two (the other half can be used for another pizza). Roll the dough out onto a baking tray until it is the desired thickness.

11. Cook in the pre-heated oven for 20 minutes.

12. Whilst the base is cooking, chop the pepper, mushrooms, tomatoes and the rest of the onion and jalapeno in to strips.

13. Put the mushrooms into a bowl with the rest of the chilli oil, a crushed clove of garlic and a teaspoon of coriander.

14. When the base is out the oven, cover it in the avocado mixture - topping with the mushrooms, tomatoes, peppers, onion and jalapeno.

15. Return to the oven and cook for a further 4 minutes.

16. Take out of the oven once the base is fully cooked (but not burnt), slice up, and enjoy!
